Haymarket Brewery Takes a Bow

For the past week, the finishing touches, training, clean up and more have been undertaken at the new Haymarket Brewery in Bridgman…and a lot of great free food has been shared with friends, families and invited parties during the soft opening, but now it's show time! The sparkling new brewery in the former Bridgman State Police Post had one last pre-party tonight with a formal ribbon-cutting ceremony, and the officially open to the general public tomorrow, Thursday, January 12, 2017.

City, township, state and federal dignitaries and members of the Bridgman CGA Chamber turned out and delivered standing ovations to Brewmaster Pete Crowley, his partner John Neurauter, their staff and family members welcoming the new Chicago brewery with open arms. 

Contractor Zane McGuire was beaming with pride over the incredible makeover, while the invited guests were beaming over an amazing array of wood-fired pizzas hand-crafted by the staff under the tutelage of Official Pizza Chef Vincent Spina. He tells me that each pizza is flash-baked and ready in 90-seconds in the two large wood-fired pizza ovens. Those ovens are regularly stoked with oak until they reach 900-degrees inside. 

The brewery will be taking at least three deliveries of oak wood every week, year round — about half a cord at a time and they will maintain at least two full cords of wood "in the house" at all times to assure continuous operation of the immense ovens that each can cook up to five pizzas at a time.

Spina says they will maintain a regular menu of eight pizza styles at a time, split evenly between "reds" and "whites," referring to the base elements utilized. Additional seasonal pizzas will be blended into the mix along with specialty pizzas that can capture farm-to-table ingredients as they rotate in and out of season. 

The base element for Red Pies is plum tomato sauce and the current menu includes the Vegan, the Margherita, the Chorizo & Brussels, the Pepperoni & Sausage and the Sausage & Giardiniera.  The base elements for the White Pies are Ricotta and Mascarpone, and the current menu includes the Elote, the Bacon & Potato, the Carmelized Shallot, and there was a specialty Pesto pie on the counter tonight.

There are three specialty salads on the current menu including a Vegan Pear Salad, a Thai Cobb Salad, and a Smoked Salmon Salad. Additional there are three sandwiches on the board using wood-fired breads including a Veggie Sandwich, a Chicken Sandwich and a Haymarket Sausage Sandwich. Sides include House Chips & Fennel Slaw, both of which can also be ordered ala carte. Nearly a dozen sauces are also on the menu.

Oh…and there's beer in the house, too, naturally…with multiple options…and a line of 16-tap handles. There were smiles all around, and a great deal of pride for the Bridgman community now that the long wait for a world class brewery is finally over. You'll find them open tomorrow on Red Arrow Highway just north of the city proper. Check it out.
