A Winter Home for Crepes

Chris Bussing's foray into the world of crepes will get a new lease on life next month when his mobile crepery rolls indoors for the winter.  Bussing, who was a weekend staple on the streets of downtown South Haven this summer, will fire up the crepe maker inn the Orchards Mall of Benton Harbor beginning in the second week of November...and will remain "in the house" through February for those who are either pining for his sweet offerings or waiting to discover them.

Chris originally established his Old World Crepery in Glenn, south of South Haven, for the 2011 Indoor Winter Market there.  Glenn is apparently affectionately known as "Pancake Town," and Chris' crepes were the closest he could come to that delicacy when the market master was seeking food service for the site.  He went on to operate his wagon at the Snug Harbor Resort in Muskegon in June of 2012 and landed a partnership with Golden Brown Bakery in downtown South Haven for the just finished summer season.  

The Old World Crepery menu this summer included upwards of eight styles of fresh crepes including sweet variations, breakfast offerings, and savory crepes for later in the day.  His sweet toppings include such things as Nutella, Strawberry, Apple & Cinnamon, and Banana (or any combination of those).  His breakfast offering included a scrambled egg over a Savory Crepe with shredded Cheddar Jack & Honey Roasted Bacon.  For savory options, Chris teed up the Rouladen (thin sliced, slow roasted, peppered beef spread with Dijon mustard, and a dill pickle spear rolled in a Savory Crepe), the Neptune (diced crab in a cream cheese Florentine Bearnaise), and the Chicken Florentine (diced white chicken breast in a spinach avocado and cream cheese Dijon).  

Look for Chris in his authentic French chef gear and his colorful crepery in the Mall starting in the second week of November.
