How to SCORE a Winning Menu and More

We routinely hear from the world of business that success is highly dependent on three key factors: location, location and location. However, even the restaurants with the finest location who fail to craft their menu and manage it properly can sink faster than a rock to the bottom of your pond. That’s why the team at SCORE of Southwest Michigan is hosting their next “Art-of-the-Menu” Workshop for area establishments interested in perfecting their game.

SCORE, the Women’s Business Center at Cornerstone Alliance and Kinexus invite current and future hospitality industry entrepreneurs, owners, managers and their team members to attend the workshop and help build their menu to success with the help of a 30-year veteran of the hospitality industry. The session is slated for Monday, April 24th from 9:30am until noon at the offices of Kinexus at 499 W. Main Street in Benton Harbor.

SCORE execs know that menu management is the key to not only controlling your costs, but also to staying competitive, identifying profit opportunities, and maximizing your guests’ experience. Learn the ‘Art-of the-Menu’ from a veteran of the hospitality industry, Allison Strauss.

In the Art-of the-Menu workshop you will learn how to better manage your success and profitability; including:

  • How to properly estimate your food cost
  • How food cost relates to inventory management
  • How to use your menu mix analysis for cost savings
  • How to use your menu as a marketing tool

You will also examine key issues in the industry to learn:

  • What the best practices of menu design, grammar, and layout are
  • What’s trending and how to maximize your guests’ experience for repeat business

Attendees are invited to bring a copy of your current menu for an on-the-spot analysis and feedback to help your restaurant succeed.

The SCORE presenter, Allison Strauss, brings nearly thirty years of experience in the restaurant and hospitality business arenas, and is currently a partner in Strauss Training, Inc. (www.strauss.training). She also brings the experience of helping open new restaurants and turning around established restaurants. Previously Allison was the General Manager of Harry Caray’s Italian Steakhouse for 14 years. She is a graduate of Kendall College with a BA in Hotel and Restaurant Management.
